
What you need
milk, sugar, heavy cream, rice, and vanilla extract
What you do
Blend 300ml half & half (I substitute milk and heavy cream with leftover half and half), 70g sugar, 1t vanilla extract, and 84g cooked cooled rice.
Put them in an ice cream maker for 25 mins (I used Cuisinart’s Pure Indulgence 2 Quart Frozen Yogurt-Sorbet & Ice Cream Maker).
Lab notes
It was my first time making homemade gelato, and the texture was a bit drier than I expected, maybe due to the half and half I substituted (just did it my way 😉 ). Next time, I’ll stick to the recipe I found online and update on it. It was still good though!
I put them in the freezer for about 2 hours, and the rice grains turned out a bit chewy, like boba in bubble tea. I loved it! Also, the subtle sweetness from the rice was great!
