
What you need
3 eggs, sugar, vanilla extract, mascarpone cheese, heavy cream, espresso shots, cocoa powder, and 12 ladyfingers (I used Alessi Biscotti Savoiardi Lady Fingers)
What you do
In bowl 1, combine 3 egg yolks, 40g sugar, and 3g vanilla extract, and mix.
Then, heat it over a double boiler until slightly thickened.
In bowl 2, whip 250g room temperature mascarpone cheese using a hand mixer, then add 150g heavy cream and whip until firm.
Pour the egg mixture from the double boiler into bowl 2 and mix gently to complete the cream.
Dip the ladyfingers in espresso shots and layer them alternately with the cream.
On the top layer of cream, sift powdered sugar, then sift cocoa powder over it to finish!
Lab Notes
I liked the texture where the ladyfingers were soaked enough in the coffee that they almost melted in your mouth when you ate them.
They say traditional Italian recipes don’t include heavy cream so I’ll look into it and try it next time 😉
I’ve also tried making green tea tiramisu, but the original tastes much better.
